Banana Cake

- 4 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2/3 cup shortening
- 4 eggs
- 3 cups sugar
- 2 cups chopped walnuts
- 2 cups mashed bananas
- 1 1/2 cups buttermilk
- 1 teaspoon vanilla
- Frosting:
- 1 (8 ounce) and 1 (3 ounce) package cream cheese, softened
- 3/4 cup butter, softened
- 1 (16 ounce) box powdered sugar
Instructions
- Combine shortening and sugar. Add eggs one at a time, beating well after each addition. Add vanilla. Dissolve baking soda in buttermilk, adding to creamed mixture with flour, baking powder, salt and bananas. Add nuts last. Pour into three 9 inch greased and floured baking pans. Bake at 350 degrees for 25 minutes or until cake tests done. Cool layers on wire rack.
- To prepare frosting, cream butter and cream cheese until well blended. Add powdered sugar and beat until smooth. Frost between layers, top and sides of cake.
