Cake: Banana Cinnamon Cake

- 1 1/2 cups unbleached all-purpose flour
- 1/2 cup brown sugar, packed
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 (6 ounce) container banana yogurt
- 1 medium banana, mashed
- 2 tablespoons applesauce, room temperature
- 2 egg whites, whipped
- 1 teaspoon vanilla
- Frosting:
- 1 cup powdered sugar, sifted
- 2 tablespoons margarine, melted
- 2 tablespoons skim milk, room temperature
Instructions
- Preheat oven to 375 degrees. Prepare a 9" baking pan with cooking spray and flour.
- To prepare batter: Combine flour, brown sugar, baking powder, baking soda, cinnamon and salt in a mixing bowl. In another mixing bowl, combine yogurt, banana, applesauce, egg whites and vanilla. Mix dry ingredients with wet ingredients just until combined.
- Pour batter into prepared pan. Bake 20 to 30 minutes or until cake springs back when lightly touched. Meanwhile, to prepare frosting, combine powdered sugar, melted margarine and milk in a mixing bowl; beat until smooth. Spread frosting over cooled cake.
