    Cake: Banana Cinnamon Cake

    • 1 1/2 cups unbleached all-purpose flour
    • 1/2 cup brown sugar, packed
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1/4 teaspoon salt
    • 1 (6 ounce) container banana yogurt
    • 1 medium banana, mashed
    • 2 tablespoons applesauce, room temperature
    • 2 egg whites, whipped
    • 1 teaspoon vanilla
    • Frosting:
    • 1 cup powdered sugar, sifted
    • 2 tablespoons margarine, melted
    • 2 tablespoons skim milk, room temperature


    Instructions


    1. Preheat oven to 375 degrees. Prepare a 9" baking pan with cooking spray and flour.

    2. To prepare batter: Combine flour, brown sugar, baking powder, baking soda, cinnamon and salt in a mixing bowl. In another mixing bowl, combine yogurt, banana, applesauce, egg whites and vanilla. Mix dry ingredients with wet ingredients just until combined.

    3. Pour batter into prepared pan. Bake 20 to 30 minutes or until cake springs back when lightly touched. Meanwhile, to prepare frosting, combine powdered sugar, melted margarine and milk in a mixing bowl; beat until smooth. Spread frosting over cooled cake.
