Pie: Buttermilk Coconut Pie

- Crisco classic pie crust, unbaked 3
- 3 eggs
- 1/3 cup self rising flour
- 1 1/2 cups sugar
- 1/2 cup butter, melted and cooled
- 3/4 cup buttermilk
- 1 teaspoon vanilla
- 1 cup shredded coconut
Instructions
- Preheat oven to 350 degrees. Prepare Crisco classic crust as directed; do not bake.
- In a medium mixing bowl, whisk together the eggs, flour, sugar, melted butter, buttermilk and vanilla; whisk until smooth. Stir in shredded coconut. Pour mixture into unbaked pie shell.
- Bake 1 hour or until the center is set.
