Cake: Pineapple Easy Cake

- 2 cups sugar
- 2 teaspoons baking soda
- 2 cups flour
- # 2 can crushed pineapple (do not drain)
- 2 eggs
- Cream Cheese Icing:
- 1/2 cup butter, softened
- 1 (8 ounce) package cream cheese
- 1 cup confectioners' sugar
- 1 teaspoon vanilla
Instructions
- Mix all ingredients in a 9x13x2 pan. Do not grease. Bake at 350 degrees for 35 to 40 minutes, do not overbake. Top with cream cheese icing For icing just mix all ingredients together. Keep refrigerated.
Final Comments
For an easier easy pineapple cake substitute 1 package yellow cake mix for the sugar, soda and flour, use 3 eggs instead of 2 and use a 20 ounce can crushed pineapple with juice. Mix all ingredients together well and bake at 350 degrees in 9x13 inch pan with non stick cooking spray for 30 to 35 minutes.
