Cake: Easy Upside Down Pineapple Cake

- 9 ounces crushed pineapple
- 1/4 cup butter, softened
- 1/2 cup brown sugar, packed
- 2 cups all-purpose flour
- 1 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup shortening
- 1 egg
- 1 cup milk
- 1 teaspoon vanilla
Instructions
- Mix together undrained pineapple, butter and brown sugar; spread in bottom of a greased 9x9 inch baking pan.
- Sift together dry ingredients and place in a bowl; add remaining ingredients and beat 2 minutes with an electric mixer on medium speed. Pour the batter over pineapple mixture in pan. Bake in 350 degrees for 45 to 50 minutes. Remove from oven; immediately turn cake upside down onto serving plate. Top with whipped cream or can be served plain.
