    Cake: Easy Upside Down Pineapple Cake

    List of Ingredients


    • 9 ounces crushed pineapple
    • 1/4 cup butter, softened
    • 1/2 cup brown sugar, packed
    • 2 cups all-purpose flour
    • 1 cup sugar
    • 3 teaspoons baking powder
    • 1 teaspoon salt
    • 1/2 cup shortening
    • 1 egg
    • 1 cup milk
    • 1 teaspoon vanilla


    Instructions


    1. Mix together undrained pineapple, butter and brown sugar; spread in bottom of a greased 9x9 inch baking pan.

    2. Sift together dry ingredients and place in a bowl; add remaining ingredients and beat 2 minutes with an electric mixer on medium speed. Pour the batter over pineapple mixture in pan. Bake in 350 degrees for 45 to 50 minutes. Remove from oven; immediately turn cake upside down onto serving plate. Top with whipped cream or can be served plain.

    3. Serves 6
