    Glazed Carrot Cake

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 cups sugar
    • 2 teaspoons baking soda
    • 1 1/2 teaspoons cinnamon
    • 1 teaspoon salt
    • 2 cups shredded carrots
    • 3/4 cup buttermilk
    • 3/4 cup cooking oil (canola or vegetable)
    • 1 (8 ounce) can crushed pineapple, drained
    • 1 cup chopped walnuts
    • 3 eggs
    • 1 1/3 cups coconut
    • 1 teaspoon vanilla
    • Raisins, if desired
    • Walnuts to garnish
    • Glaze:
    • 3/4 cup sugar
    • 1/3 cup buttermilk
    • Frosting:
    • 1 (8 ounce) package cream cheese, softened
    • 1/2 cup butter, softened
    • 2 teaspoons vanilla
    • 1 (16 ounce) box powdered sugar


    Instructions


    1. Grease a 13x9x2 inch pan and lightly flour. Preheat oven to 350 degrees. Combine flour, sugar, baking soda, cinnamon and salt. Add carrots, buttermilk, oil, pineapple, eggs, coconut and vanilla (raisins and walnuts if using). Stir until combined. Spread batter in pan. Bake 40 to 45 minutes or until cake springs back. Poke holes in top of cake while hot and pour on glaze. Frost when cool.
    2. Beat cream cheese, butter and vanilla until light and fluffy. Gradually add enough sugar to make frosting consistency. Spread on cake. Top with walnuts.
