    Fried Pies: Grandma Jimmy's Fried Raisin Pies

    List of Ingredients


    • Crust:
    • 1 1/2 cups all-purpose flour (White Lily works really well)
    • 1 1/2 cups self-rising flour
    • 1 tablespoon sugar
    • 1/2 teaspoon salt
    • 2/3 cup Crisco
    • 1 (12 ounce) can evaporated milk
    • Filling:
    • 1 1/2 cups raisins
    • 1 1/2 cups boiling water
    • 1 tablespoon flour
    • 1/2 cup sugar


    Instructions


    1. To make crust, sift together first 5 ingredients. Cut in Crisco. Add evaporated milk and mix well. Chill for at least 2 hours. (My mother recommends over night). Use a small saucer as a template. Put a large spoonful of filling in the middle and fold pastry in half. Flute edges together and seal with fork. Fry in crisco oil. Drain well.

    2. To make filling: Cook raisins in boiling water until plump. Add flour and sugar and cook until it thickens (usually 2 to 3 minutes are enough). Let cool slightly.
