    Mammy Strickland's Lemon Meringue Pie

    List of Ingredients


    • 4 lemons, fresh one's
    • 3/4 cup sugar
    • 1 tall can Carnation evaporated milk
    • 6 tablespoons self-rising flour
    • 4 egg yolks, save whites
    • 6 tablespoons sugar for meringue
    • 1 store bought pie crust


    Instructions


    1. Roll, cut and squeeze the juice from the lemons. Grate a little of the peel for zest in the pie. In a large bowl, put the egg yolks, sugar, lemon juice and zest. Mix well and add flour and evaporated milk, mixing well again. Have the pie crust at room temperature. Then pour your pie filling into the crust; bake at 325 degrees for 30 minutes. Now beat the egg whites adding cream of tartar and 6 tablespoons of sugar to the whites, beat stiff. Spoon onto baked pi, return to oven and broil until browned slightly. Cool completely.
