Pound Cake: Chocolate Cream Cheese Pound Cake

- 1 cup butter, softened
- 1 (8 ounce) package cream cheese, softened
- 3 cups sugar
- 6 eggs
- 1 teaspoon pure vanilla extract
- 2 1/4 cups cake flour
- 1 teaspoon baking powder
- 3/4 cup cocoa
Instructions
- Preheat oven to 325 degrees. Grease and flour a 10 inch bundt pan.
- Using an electric mixer, cream together butter, cream cheese and sugar. Add eggs two at a time, beating well after each addition. Add vanilla. In another bowl, stir together flour, baking powder and cocoa. Add one half of flour mixture to creamed mixture, beat well, add remaining half of flour mixture and continue to beat at medium speed for 2 minutes.
- Pour batter into prepared pan and bake for 1 1/4 hours. Continue to bake for an additional 15 minutes if necessary, but do not open oven to check cake for at least 1 hour.
- Yield: 16 to 20 servings
- Cream Cheese Pound Cake: Replace cocoa with cake flour, making a total of 3 cups flour.
- Sour Cream Pound Cake: Substitute 8 ounces sour cream for cream cheese. Add sour cream alternately with the flour. Omit cocoa and use 3 cups cake flour.
- Chocolate Sour Cream Pound Cake: Substitute 8 ounces sour cream for cream cheese. Add sour cream alternately with flour/cocoa mixture.
