Pound Cake: Lemon Lovers Pound Cake

- 1 cup butter, softened
- 3 cups sugar
- 6 eggs
- 5 tablespoons lemon juice
- 1 tablespoon grated lemon peel
- 1 teaspoon lemon extract
- 3 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cup sour cream
- Icing:
- 1/4 cup sour cream
- 2 tablespoons butter, softened
- 2 1/2 cups confectioners' sugar
- 3 tablespoons lemon juice
Instructions
- In a bowl, cream butter and sugar until light and fluffy, about 5 minutes. Add eggs one at a time, beating well after each addition. Stir in lemon juice, peel and extract.
- Combine flour, baking soda and salt, add to creamed mixture, alternately with sour cream. Beat until just combined.
- Pour into greased and floured 10 inch fluted tube pan. Bake at 350 degrees for 55 to 60 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes before removing from pan to wire rack to cool completely.
- For icing. In a bowl beat butter and sour cream until blended, gradually add confectioners' sugar. Beat in lemon juice and peel. Drizzle over cake. Store in refrigerator.
- Yield: 12 servings
