Cake: Pumpkin Roll

- 3 eggs
- 3/4 cup sugar
- 1 cup flour
- 1/2 teaspoon cinnamon
- 2/3 cup pumpkin
- 1 teaspoon baking soda
- Sprinkle with chopped nuts, if desired
- Filling:
- 1 (8 ounce) package cream cheese, softened
- 1 teaspoon vanilla
- 1 cup sifted powdered sugar
- 2 teaspoons butter
Instructions
- Preheat oven to 350, Spray the cookie sheet with Pam (make sure to cover well). Mix all together and spread over large cookie sheet with sides. Sprinkle with chopped nuts. Bake at 350 for 15 minutes. After it's baked, remove from pan while it's warm, place on tea towel (sprinkle with powdered sugar) Roll up tea towel until it's cool.
- Mix well. Spread on the inside of the Pumpkin Roll and re roll the log. Refrigerate for at least 6 hours before cutting.
