Cake: Strawberry Cheesecake Icebox Cake

- 25 sheets low fat graham crackers
- 2 boxes sugar free cheesecake pudding mix
- 3 cups skim milk
- 1 (8 ounce) tub fat free cool whip
- 1 package sugar free strawberry jello
- 1 cup boiling water
- 1/2 cup cold water
- 1 cup thinly sliced strawberries
Instructions
- First, mix your jello with boiling water until dissolved and then add cold water. Let cool. Mix 3 cups milk with pudding. Fold in cool whip.
- In a 13x9x2 pan, layer 8 graham crackers. Place 1/2 the pudding mixture on top, top with 8 graham crackers and remaining pudding. Layer another layer of graham crackers.
- When the jello is cooled but not firm, gently fold the strawberries in. Let jello sit until slightly firm. Then pour over the top.
