    Cake: Strawberry Upside Down Cake

    List of Ingredients


    • 1 cup frozen apple juice concentrate, thawed
    • 3 cups strawberries
    • 1 1/2 cups flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 2/3 cup sugar
    • 1 egg
    • 2/3 cup milk
    • 1/2 cup oil
    • 2 teaspoons vanilla


    Instructions


    1. Spray a 10 inch ovenproof skillet with non stick spray. Pour 1/4 cup of the apple juice concentrate in the pan. Arrange the strawberries, in the pan, in a single layer. Place pan in the freezer for 15 minutes.

    2. In a large bowl, stir together flour, baking powder, salt, and sugar. Add egg, milk, oil and vanilla; beat on medium speed for 2 minutes. Remove the skillet from the freezer. Pour the batter over the berries. Bake, in the skillet, at 350 for 30 to 35 minutes.

    3. Let the cake cool, in the skillet, for 15 minutes. Loosen the edges with a knife and invert to a serving plate. Let the skillet rest over the serving plate for 5 minutes (to allow any juices to run onto the cake) before lifting the skillet to reveal the strawberry upside down cake. Enjoy.
