Cake: Strawberry Upside Down Cake

- 1 cup frozen apple juice concentrate, thawed
- 3 cups strawberries
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup sugar
- 1 egg
- 2/3 cup milk
- 1/2 cup oil
- 2 teaspoons vanilla
Instructions
- Spray a 10 inch ovenproof skillet with non stick spray. Pour 1/4 cup of the apple juice concentrate in the pan. Arrange the strawberries, in the pan, in a single layer. Place pan in the freezer for 15 minutes.
- In a large bowl, stir together flour, baking powder, salt, and sugar. Add egg, milk, oil and vanilla; beat on medium speed for 2 minutes. Remove the skillet from the freezer. Pour the batter over the berries. Bake, in the skillet, at 350 for 30 to 35 minutes.
- Let the cake cool, in the skillet, for 15 minutes. Loosen the edges with a knife and invert to a serving plate. Let the skillet rest over the serving plate for 5 minutes (to allow any juices to run onto the cake) before lifting the skillet to reveal the strawberry upside down cake. Enjoy.
