Pie: Toasted Coconut Pie

- 2 cups flaked coconut
- 1 1/2 cups heavy cream
- 3 tablespoons firmly packed light brown sugar
- 1 (9 inch) ready to use graham cracker crust
Instructions
- Preheat broiler. Spread coconut in 13x9" baking dish. Broil 3 minutes, stirring frequently or until coconut is browned. Remove from baking dish and spread on aluminum foil to cool.
- In large bowl combine brown sugar and heavy cream. Beat on high speed until stiff peaks form. Fold in all but 1/2 cup toasted coconut. Spoon into piecrust. Sprinkle remaining toasted coconut over top of pie. Chill.
