    Pie: Toasted Coconut Pie

    List of Ingredients


    • 2 cups flaked coconut
    • 1 1/2 cups heavy cream
    • 3 tablespoons firmly packed light brown sugar
    • 1 (9 inch) ready to use graham cracker crust


    Instructions


    1. Preheat broiler. Spread coconut in 13x9" baking dish. Broil 3 minutes, stirring frequently or until coconut is browned. Remove from baking dish and spread on aluminum foil to cool.

    2. In large bowl combine brown sugar and heavy cream. Beat on high speed until stiff peaks form. Fold in all but 1/2 cup toasted coconut. Spoon into piecrust. Sprinkle remaining toasted coconut over top of pie. Chill.
