Cupcakes: Toll House Cupcakes

List of Ingredients
- 1/2 cup butter
- 6 tablespoons brown sugar
- 6 tablespoons granulated sugar
- 1/2 teaspoon vanilla
- 1 egg
- 1 cup plus 2 tablespoons flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Filling:
- 1/2 cup brown sugar
- 1 egg
- 1/8 teaspoon salt
- 6 ounces semi sweet chocolate chips
- 1/2 cup chopped walnuts
- 1/2 cup coconut, optional
- 1/2 teaspoon vanilla
Instructions
- Combine butter, brown sugar, granulated sugar and 1/2 teaspoon vanilla; beat until thick. Add egg, flour, baking soda and salt; beat until thick and well combined. Spoon batter into paper lined tins evenly dividing between 12 cupcakes.
- Bake at 375 degrees for about 10 minutes or until golden. Remove from oven and spoon filling into each cup, dividing evenly among cupcakes. Bake again for about 15 minutes.
- Filling: Combine all ingredients well.
- Note: You can also have a bite size dessert if miniature muffin pans are used.
