    Cake: Yellow Cake

    List of Ingredients


    • 4 large eggs, separated
    • 3/4 cup butter, at room temperature
    • 2 cups granulated sugar
    • 2 teaspoons vanilla extract
    • 2 3/4 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup buttermilk


    Instructions


    1. Preheat oven to 350 degrees. Grease and flour a 9x13 inch baking pan.

    2. In a medium sized bowl, beat the egg whites with an electric mixer until stiff but not dry. Set aside.

    3. In a seperate mixing bowl, cream butter for 1 to 2 minutes; add the sugar and cream for another 2 minutes. Add egg yolks all at once and beat for another minute or until the mixture appears light and fluffy. Beat in the vanilla extract.

    4. In a seperate mixing bowl, combine flour, baking powder, baking soda and salt.

    5. Add flour mixture to creamed mixture alternately with buttermilk. Mix well after each addition but do not over beat. Fold beaten egg whites into batter.

    6. Pour batter into prepared pan. Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
