    Chocolate Caramels

    List of Ingredients


    • 1 cup butter
    • 1 cup granulated sugar
    • 1 cup packed dark brown sugar
    • 1 cup light corn syrup
    • 1 (14 ounce) can sweetened condensed milk
    • 2 ounces unsweetened baking chocolate
    • 1 teaspoon vanilla extract


    Instructions


    1. Line an 8" square baking pan with foil; grease.

    2. Combine butter, granulated sugar, dark brown sugar and corn syrup in a heavy duty 2 1/2 quart saucepan.

    3. Cook over medium heat, stirring constantly until mixture boils and butter is melted.

    4. Add condensed milk and chocolate; stir constantly until chocolate is melted.

    5. Cook over medium low heat, stirring frequently until mixture reaches 245 degrees on a candy thermometer, about 25 to 30 minutes.

    6. Remove from heat; stir in vanilla extract.

    7. Immediately pour into prepared pan. Cool.

    8. Lift from pan; remove foil.

    9. Cut into 1" squares and wrap individually in plastic wrap, twisting ends.

    10. Store at room temperature, using within 7 to 10 days.

    11. If caramels become to firm to cut, soften slightly in microwave oven on defrost for about 2 minutes; or warm in a 200 degree oven for about 5 minutes.
