    • 3 egg whites
    • 3 cups sugar
    • 2/3 cup light corn syrup
    • 3/4 cup water
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 1 cup coarsely chopped pecans
    • 6 candied cherries quartered


    Instructions


    1. Warm egg whites in a large bowl for 1 hour.
    2. Line an 11x7x1-1/2" pan with waxed paper.
    3. In a heavy 3-quart saucepan, combine sugar, light corn syrup and 3/4 cup water.
    4. Cook over low heat until sugar dissolves.
    5. Bring to a boil.
    6. Cook without stirring to 360 degrees on a candy thermometer. Let cool slightly.
    7. At 150 degrees, beat egg whites and salt to stiff peaks.
    8. Gradually pour hot syrup over egg whites, beating constantly at high speed for 5 minutes.
    9. With a wooden spoon, beat in the rest of the ingredients until it looks dull.
    10. Pour into prepared pan.
    11. Let stand until firm.
    12. Cut into 24 pieces and store in waxed paper.
