    • 2 1/2 cups sugar
    • 1/2 cup light corn syrup
    • 2 egg whites
    • 1 teaspoon vanilla
    • 1/2 cup chopped nuts or chopped candied fruit


    Instructions


    1. Combine sugar, corn syrup and 1/2 cup water in a saucepan and heat over medium until boiling.
    2. Continue to cook, without stirring, until a candy thermometer reads 260 degrees.
    3. Beat egg whites with an electric mixer until stiff peaks form.
    4. Gradually add hot mixture in a thin stream over egg whites and continue beating for 3 minutes.
    5. Add vanilla and continue beating until candy begins to lose it's gloss, about 5 to 6 minutes.
    6. Gently stir in nuts or fruit if desired.
    7. Drop by spoonfuls onto waxed paper; if mixture flattens out, continue beating for another minute.
    8. Add hot water if candy is to thick to spoon.
    9. Makes 40 servings at 40 calories each.
