- 2 1/2 cups sugar
- 1/2 cup light corn syrup
- 2 egg whites
- 1 teaspoon vanilla
- 1/2 cup chopped nuts or chopped candied fruit
Instructions
- Combine sugar, corn syrup and 1/2 cup water in a saucepan and heat over medium until boiling.
- Continue to cook, without stirring, until a candy thermometer reads 260 degrees.
- Beat egg whites with an electric mixer until stiff peaks form.
- Gradually add hot mixture in a thin stream over egg whites and continue beating for 3 minutes.
- Add vanilla and continue beating until candy begins to lose it's gloss, about 5 to 6 minutes.
- Gently stir in nuts or fruit if desired.
- Drop by spoonfuls onto waxed paper; if mixture flattens out, continue beating for another minute.
- Add hot water if candy is to thick to spoon.
- Makes 40 servings at 40 calories each.
