Vegetable: Baked Garlic Potato Casserole

- 2 large potatoes, sliced 1/4 inch thick
- 2 teaspoons olive oil
- 1 large onion, diced
- 1 1/2 teaspoons garlic, minced
- 2 teaspoons parsley, chopped
Instructions
- Preheat the oven to 400 degrees. Spray nonstick skillet with cooking spray. Heat the oil in a skillet. Add the onion and cook until soft. Add the garlic and cook for 2 minutes longer. Lightly oil a medium casserole dish. Layer in the sliced potatoes. Pour the mixture over the potatoes. Cover and bake for 1 hour (or until the potatoes are tender). Serve warm, garnished with parsley.
