Beef: Canyon Casserole

- 1 pound ground beef
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 (7 ounce) can vacuum packed whole kernel corn, drained
- 1/2 cup water
- 1 (1 1/4 ounce) package taco seasoning mix
- 1 cup Martha White Buttermilk Self-Rising Corn Meal Mix
- 1/2 cup milk
- 2 tablespoons oil
- 1 egg
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400 degrees. Grease an 8 inch square glass baking dish or shallow 2 quart casserole.
- Brown ground beef in skillet over medium high heat until thoroughly cooked, stirring frequently. Drain.
- Add tomatoes, corn, water and taco seasoning mix; mix well. Bring to a boil, stirring occasionally. Pour into greased baking dish.
- In a small bowl, combine corn meal mix, milk, oil and egg; blend well. Stir in cheese. Pour batter over ground beef mixture in baking dish.
- Bake at 400 degrees for 30 to 35 minutes or until topping is golden brown.
- Yield: 6 servings
