Chicken: Chicken Drumstick Cacciatore Casserole

- 1 cup uncooked regular long grain white rice
- 1 medium zucchini, sliced
- 1 (14 1/2 ounce) can ready to serve chicken broth
- 1 (14 1/2 ounce) can diced tomatoes with Italian Style herbs, undrained
- 1 (4 1/2 ounce) jar Green Giant sliced mushrooms, drained
- 8 chicken drumsticks, skin removed
- 1 teaspoon paprika
Instructions
- Preheat oven to 375 degrees. Spray a 12x8" (2 quart) glass baking dish with nonstick cooking spray.
- In sprayed baking dish, combine rice, zucchini, broth, tomaties and mushrooms; stir gently to mix. Arrange drumsticks over rice mixture. Sprinkle chicken with paprika. Cover with foil.
- Bake at 375 degrees for 30 minutes. Uncover; bake an additional 10 to 15 minutes or until chicken is fork tender and juices run clear.
