    Beef: Chili Mac Casserole

    List of Ingredients


    • 1 cup uncooked elbow macaroni
    • 2 pounds lean ground beef
    • 1 medium onion, chopped
    • 2 garlic cloves, minced
    • 1 (28 ounce) can diced tomatoes, undrained
    • 1 (16 ounce) can dark kidney beans, drained and rinsed
    • 1 (6 ounce) can tomato paste
    • 1 (4 ounce) can chopped green chiles
    • 1 1/2 teaspoons salt
    • 1 teaspoon chili powder
    • 1/2 teaspoon ground cumin
    • 2 cups shredded mexican blend cheese


    Instructions


    1. Cook macaroni according to package directions.

    2. Meanwhile, in a large nonstick skillet, cook the beef, onion and garlic until meat is no longer pink; drain.

    3. Stir in the tomatoes, beans, tomato paste, chiles and seasonings.

    4. Drain macaroni; add to beef mixture.

    5. Transfer to a 9x13" baking pan coated with nonstick cooking spray.

    6. Cover and bake at 375 for 25 to 30 minutes or until bubbly.

    7. Uncover; sprinkle with cheese.

    8. Bake 5 to 8 minutes longer or until cheese is melted.

    9. Yield: 10 servings.
