    Beef: Eldorado Beef And Cheese Casserole

    List of Ingredients


    • 1 pound ground beef
    • 1 tablespoon instant minced onion
    • 1/2 teaspoon garlic salt
    • 1 (15 ounce) can tomato sauce
    • 1 cup ripe olives, sliced and chopped
    • 1 cup dairy sour cream
    • 1 cup small curd cottage cheese
    • 1 (4 ounce) can chopped green chiles, drained
    • 1 (8 ounce) package tortilla chips
    • 2 cups grated monterey jack cheese


    Instructions


    1. In frying pan, cook ground beef until crumbly; drain off excess fat.

    2. Add onion, garlic salt and tomato sauce.

    3. Cook, covered, over low heat until just heated.

    4. Remove from heat and set aside.

    5. Combine sour cream, cottage cheese, green chiles and sliced olives; set aside.

    6. Crush tortilla chips slightly, reserving a few whole chips for garnish, if desired.

    7. Place half of the chips in a well buttered 2 1/2 quart cassarole dish.

    8. Now add half of the meat mixture; cover with half of the sour cream mixture and sprinkle with half of the grated cheese. Repeat layers.

    9. Bake, uncovered, in a 350 degree oven for 30 to 35 minutes or until bubbly and hot.

    10. Garnish with reserved tortilla chips.

    11. Serve with sour cream, if desired.
