Smoked Sausage: Flash In The Pan Skillet Supper

- 1 cup (about 1 1/2 ounces) dried tomato halves, snipped in half
- 1 1/4 pounds (4 medium) potatoes, sliced 1/4 inch thick
- 1 tablespoon vegetable oil
- 12 ounces reduced fat smoked sausage, sliced 1/4 inch thick
- 3/4 cup sliced green onions
- 1/3 cup prepared honey dijon barbecue sauce
Instructions
- In a bowl cover tomatoes with hot water; set aside 10 minutes.
- Place potatoes in microwave safe bowl; cover, venting one corner. Cook on high about 8 minutes, just until tender.
- Meanwhile, heat oil in large nonstick skillet. Add sausage; cook and toss over medium high heat 5 minutes. Add potatoes; cook and toss 5 miutes. Drain and add tomatoes, then onions and barbecue sauce. Cook and toss 2 to 3 minutes until heated through. Serves 4.
