Chicken: Fresh Tomato Chicken Casserole

- 8 meaty pieces chicken (split breast, thighs, drumbsticks)
- 3 fresh tomatoes, coarsely chopped or 1 (14 1/2 ounce) can whole tomatoes, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons parsley
- 1 teaspoon dried basil
- 1 teaspoon dried oregano leaves
- 1 teaspoon ground cumin (optional)
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 bay leaves, crumbled
- 1/4 to 1 cup shredded parmesan cheese
Instructions
- Arrange chicken snuggly but not overlapping in shallow baking dish. Combine tomatoes, onion, garlic, parsley, basil, oregano, cumin (optional), salt, pepper, and bay leaves. Pour over chicken. Cover and bake at 350 degrees degrees for 45 minutes until chicken is tender. Sprinkle with Parmesan cheese. Cover and bake 15 minutes longer or until juices run clear when chicken is pierced with a fork.
