Chicken: King Ranch Chicken Casserole

- 2 cups chicken breast, cooked and cut in pieces
- 1 (10 3/4 ounce) can Healthy Request cream of mushroom soup
- 1 (10 3/4 ounce) can Healthy Requsest cream of chicken soup
- 1 can rotel tomatoes
- 8 corn tortillas cut in fourths
- 1 cup Sargento light shredded Mexican cheese (can use reduced fat cheddar also)
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/2 cup chopped celery
- Salt and pepper to taste
Instructions
- Saute onion, garlic and celery in a nonstick pan coated with cooking spray. Add soups and rotel and heat. Add salt and pepper to taste.
- Spray 9x12 pan with cooking spray. Layer 1/2 of tortilla chips in bottom. Pour 1/2 of soup mixture over tortillas. Sprinkle 1/2 chicken and 1/2 cheese over soup mixture. Repeat layers ending with cheese.
- Cover and bake in 350 degree oven for 40 minutes. Uncover and cook additional 10 minutes.
