    Beef: Lasagna Casserole

    List of Ingredients


    • 1 pound ground beef
    • 1/4 cup chopped onion
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper, divided
    • 1 (16 ounce) package medium shell pasta, cooked and drained
    • 4 cups shredded mozzarella cheese, divided
    • 1 (24 ounce) carton small curd cottage cheese
    • 2 eggs, beaten
    • 1/3 cup grated parmesan cheese
    • 2 tablespoons dried parsley flakes
    • 1 (26 ounce) jar spaghetti sauce


    Instructions


    1. In skillet, cook beef and onion until meat is no longer pink and onion is tender; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside.

    2. In a large bowl, combine pasta, 3 cups of mozzarella cheese, cottage cheese, eggs, parmesan cheese, parsley and remaining 1/4 teaspoon pepper; stir gently.

    3. Pour into a greased 13x9x2", or 3 quart shallow baking dish.

    4. Top with beef mixture and spaghetti sauce (dish will be full).

    5. Cover and bake at 350 for 45 minutes.

    6. Sprinkle with remaining mozzarella.

    7. Bake, uncovered, 15 minutes longer or until cheese is melted and bubbly.

    8. Let stand 10 minutes before serving.

    9. Yield: 6 to 8 servings
