    Vegetable: Macaroni Tomato Bake

    List of Ingredients


    • 1 (7 ounce) package macaroni, cooked and drained
    • 1 3/4 cup milk
    • 3/4 cup grated parmesan cheese
    • 1/3 cup chopped onion
    • 3 eggs, beaten
    • 1 1/2 teaspoons salt
    • 1/4 teaspoon pepper
    • 1 (6 ounce) package low moisture part skim mozzarella cheese sliced, cut into thin strips
    • 1 1/2 cups fresh bread crumbs
    • 2 tablespoons margarine, melted
    • 2 tomatoes


    Instructions


    1. Heat oven to 350 degrees. Combine macaroni, milk, 1/2 cup Parmesan cheese, onion, eggs, seasonings and Mozzarella cheese. Pour 1/2 of macaroni mixture into 2 quart casserole. Top with 1 tomato, sliced.

    2. Add remaining macaroni mixture. Toss crumbs in margarine and sprinkle on top. Cut remaining tomato in wedges; arrange on casserole. Bake at 350 degrees, 45 minutes. Sprinkle with remaining Parmesan; return to oven for 5 minutes.

    3. Serves 8
