Mexican Meatloaf

- 2 pounds ground beef, browned and drained
- 1 large onion, chopped
- 1 (10 3/4 ounce) can cream of mushroom soup
- 1 (10 3/4 ounce) can cream of chicken soup
- 1 (10 3/4 ounce) can tomato soup
- 1 soup can water
- 1 (8 ounce) jar taco sauce
- 1 package taco seasoning
- 1 (4 ounce) can chopped green chiles
- 1 1/2 cups instant rice, cooked (3/4 cup before cooked
- 1 bag of Doritos
- Grated cheddar cheese
Instructions
- Mix together and pour half into a 9x13x2 inch baking dish. Crush package of doritos and put half over the meat mixture. Cover with remaining meat and bake 20 minutes at 425 degrees. Put rest of chips and some grated cheese on top and bake 10 minutes longer, until chees is melted.
Final Comments
This casserole dish is always empty when taken to a family reunion dinner. It doesn't last long at home either. Use your own judgement of how much cheese, you like added on top. My family likes a lot, so I probably use a 8 ounce block of cheese. Also, the mixture will look soupy when you put it in the pan, but it thickens up just fine.
