    Fish: Mock Lobster Casserole

    List of Ingredients


    • 1 tablespoon butter
    • 2 cups sliced mushrooms
    • 1 (10 3/4 ounce) can healthy request cream of mushroom soup
    • 1 cup skim milk
    • 2 cups imitation crab meat, cooked monkfish or other white fish fillets, flaked
    • 2 tablespoons bread crumbs
    • 2 tablespoons shredded swiss cheese (optional)
    • 1 tablespoons chopped fresh parsley


    Instructions


    1. Preheat oven to 400 degrees. In a large skillet, melt butter over medium heat. Add mushrooms to skillet; cook, stirring constantly, until tender, about 3 minutes. Add soup and milk to skillet. Mix well. Increase heat to high; cook until mixture is heated through, about 5 minutes. Add fish to skillet; toss to combine.

    2. Spoon fish mixture into a medium shallow casserole. Sprinkle bread crumbs and cheese on top.

    3. Bake until casserole is heated through and top is golden, about 30 minutes. Sprinkle with parsley. Serve immediately.
