Beef: North Of Rio Casserole

- 2 pounds lean ground beef
- 1 large onion, chopped
- Salt and pepper to taste
- 1 package taco seasoning
- 1 can whole kernel corn, drained
- 1 can ripe olives, drained and sliced
- 1 small can chopped green chiles, drained
- 6 ounces cornbread stuffing mix
- 3 cups beef or chicken broth
- 1 can campbells cream of chicken verde soup
- 1 can campbells ranchero tomato soup
- 2 cups shredded mexican blend cheese
Instructions
- Preheat oven to 350 degrees.
- Grease or spray with nonstick cooking spray a 3 quart casserole.
- Brown beef with onion, salt and pepper; drain fat.
- Add corn, olives and chiles; stir to mix.
- In a large bowl, combine remaining ingredients except cheese.
- Place beef mixture into prepared casserole.
- Pour stuffing soup mixture over beef.
- Top with cheese.
- Bake 30 minutes, or until casserole is heated through and cheese is browned.
