    Beef: North Of Rio Casserole

    List of Ingredients


    • 2 pounds lean ground beef
    • 1 large onion, chopped
    • Salt and pepper to taste
    • 1 package taco seasoning
    • 1 can whole kernel corn, drained
    • 1 can ripe olives, drained and sliced
    • 1 small can chopped green chiles, drained
    • 6 ounces cornbread stuffing mix
    • 3 cups beef or chicken broth
    • 1 can campbells cream of chicken verde soup
    • 1 can campbells ranchero tomato soup
    • 2 cups shredded mexican blend cheese


    Instructions


    1. Preheat oven to 350 degrees.

    2. Grease or spray with nonstick cooking spray a 3 quart casserole.

    3. Brown beef with onion, salt and pepper; drain fat.

    4. Add corn, olives and chiles; stir to mix.

    5. In a large bowl, combine remaining ingredients except cheese.

    6. Place beef mixture into prepared casserole.

    7. Pour stuffing soup mixture over beef.

    8. Top with cheese.

    9. Bake 30 minutes, or until casserole is heated through and cheese is browned.
