Ham: One Pot Ham And Rice

- 3 cups diced left over ham (1/2 inch pieces)
- 4 tablespoons unsalted butter or margarine
- 1 medium onion, chopped
- 2 cups long grain white rice
- 2 cups chicken broth
- 2 cups water
- 1 medium sweet potato, peeled and diced (1/2 inch pieces)
- 1/3 cup minced chives or chopped green onions
- 1/4 cup grated parmesan cheese
- black pepper for serving
Instructions
- In a Dutch oven, cook ham over medium heat, stirring, until golden, about 4 minutes. Transfer to a plate. In the pan, melt 2 tablespoons butter. Add the onion and cook until softened, about 5 minutes.
- Add the rice, broth and water and bring to a simmer. Stir in the sweet potato and ham. Cover, reduce the heat to very low and steam for 18 minutes without lifting the lid.
- Remove the pan from the heat. Stir in the remaining 2 tablespoons butter, the chives and cheese. Spoon into bowls. Season with pepper and serve.
