Italian Sausage: Pizza Casserole

- 1 pound ground beef or Italian sausage (I use hot Italian sausage)
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 teaspoon garlic, chopped (I use a little more)
- 1/2 pound sliced pepperoni
- 1 (4 ounce or more) sliced mushrooms, drained
- 1 (32 ounce) jar spaghetti sauce (28 ounce works)
- 3 cups rigatoni or other small pasta, cooked and drained
- 2 cups (8 ounces) shredded mozzarella cheese
- Crushed red pepper flakes (optional and to taste)
Instructions
- In a large skillet, cook beef, onion, green pepper and garlic powder until meat is browned and vegetables are tender; drain. Stir in pepperoni, pepper flakes,mushrooms and spaghetti sauce.
- Place noodles in a greased 13x9x2" baking dish. Top with the beef mixture; sprinkle with cheese. I like to add thin strips of pepperoni on top of the cheese. These get nice and crunchy when baked. Bake uncovered, at 375 degrees for 35 to 40 minutes or until bubbly. Let stand for l0 minutes before.
- Yield: 8 to 10 servings.
