    Italian Sausage: Spaghetti Casserole

    List of Ingredients


    • 6 ounces hot Italian sausage, casings removed
    • 2 small zucchini, quartered lengthwise and sliced (about 2 cups)
    • 1 medium yellow onion, chopped (about 1 cup)
    • 2 cloves garlic, chopped
    • 1 (14 1/2 ounce) can stewed tomatoes
    • 3 ounces spaghetti broken into 1 inch pieces (about 3/4 cup)
    • 1/2 cup water
    • 1/4 cup grated parmesan cheese


    Instructions


    1. Preheat oven to 375 degrees. Spray a 2 quart casserole or individual gratin dishes with vegetable cooking spray.

    2. In a large nonstick skillet over medium heat, cook sausage, zucchini, and onion, breaking up sausage with a spoon, until zucchini is crisp-tender and sausage is no longer pink, about 10 minutes. Drain off any excess fat.

    3. Add garlic; cook for 1 minute. Stir in tomatoes, spaghetti, and water. Transfer mixture to prepared casserole, covering the spaghetti with the liquid; cover casserole with foil.

    4. Bake for 30 minutes. Sprinkle with Parmesan. Place casserole on a wire rack; let stand for 5 minutes.
