Chicken: Sports Night Casserole

List of Ingredients
- 3 to 4 boneless, skinless chicken breasts or equal amount of tenders
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup rice
- 2 cups chicken broth
- 1 can diced tomatoes, undrained
- 1 can corn, drained
- salt and pepper to taste
- 1/2 cup cheese to sprinkle on top
Instructions
- Preheat oven to 375.
- Cook the chicken until it is barely done in the oven or microwave, 10 minutes or so in oven. Cut into bite size pieces.
- Melt the butter in the microwave and add the minced garlic to it.
- In a casserole dish, add the rice, broth, butter and garlic, corn, tomatoes, chicken and salt and pepper to taste. Stir to mix.
- Cover and bake 45 minutes to an hour.
- Sprinkle with cheese and serve.
