    Chicken: Sports Night Casserole

    List of Ingredients


    • 3 to 4 boneless, skinless chicken breasts or equal amount of tenders
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • 1 cup rice
    • 2 cups chicken broth
    • 1 can diced tomatoes, undrained
    • 1 can corn, drained
    • salt and pepper to taste
    • 1/2 cup cheese to sprinkle on top


    Instructions


    1. Preheat oven to 375.

    2. Cook the chicken until it is barely done in the oven or microwave, 10 minutes or so in oven. Cut into bite size pieces.

    3. Melt the butter in the microwave and add the minced garlic to it.

    4. In a casserole dish, add the rice, broth, butter and garlic, corn, tomatoes, chicken and salt and pepper to taste. Stir to mix.

    5. Cover and bake 45 minutes to an hour.

    6. Sprinkle with cheese and serve.
