Ham: Texas Potatoes

- 2 cups diced cooked ham
- 2 cups cheddar cheese, grated
- 1 (10 3/4 ounce) can cream of mushroom soup
- 1 cup sour cream
- 1/2 cup margarine, melted
- Dash onion powder
- 2 pounds southern style hash browns, thawed
- Topping:
- 4 cups crushed corn flakes
- 1/2 cup margarine, melted
Instructions
- Stir together all except topping ingredients in 2 quart baking dish, making sure there are no dry areas. Smooth top. In a seperate bowl, combine 4 cups crushed corn flakes and 1/2 cup melted margarine.
- Cover top of casserole evenly with corn flake mixture. Cover tightly with foil. Bake at 350 degrees for 30 minutes. Remove foil and continue baking for 15 minutes or until bubbly in the middle.
- You can also put together the potato mixture ahead of time and refrigerate until ready to use. Don't make the topping until you bake it. If you want to use this as a side dish, do not add the ham.
