Almond Brickle Sugar Cookies

- 2 1/4 cups all-purpose flour
- 1 cup sugar
- 1 cup butter, softened (no substitutes)
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 (6 ounce) package almond brickle chips (toffee chips)
Instructions
- Preheat oven to 350 degrees. In a large mixer bowl, combine all ingredients except brickle bits. Beat at medium speed, scraping bowl often, until well mixed (2 to 3 minutes). By hand, stir in brickle bits. Shape rounded teaspoonfuls of dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheets. Bake for 8 to 11 minutes or until edges are very lightly browned.
- Chocolate Chip Sugar Cookies: 1 cup miniature semi-sweet chocolate chips can be substituted for 1 (6 ounce) package brickle bits.
