Coconut Oatmeal Cookies II

- 1 1/4 cups butter, softened
- 3/4 cup packed brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 1/2 cups rolled oats
- 3/4 cup flaked coconut
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, cream together butter, brown sugar, and white sugar. Mix in the egg and vanilla.
- Combine flour and baking soda; blend into creamed mixture. Stir in the rolled oats, coconut, and white chocolate chips.
- Drop dough by rounded tablespoons onto ungreased cookie sheets. Bake for 10 to 12 minutes in preheated oven, or until lightly browned.
- Cool on wire racks.
