Oatmeal Cream Pies II

- Cookies:
- 1 cup margarine
- 3/4 cup dark brown sugar
- 1/2 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/8 teaspoon cinnamon
- 1 1/2 cups Quaker one minute oats
- Cream Filling:
- 3/4 cup shortening
- 3 cups confectioners' sugar
- 1 (7 ounce) jar marshmallow cream
- 1 to 3 tablespoons milk
Instructions
- Preheat to 350 Degrees.
- In a large bowl, cream together margarine, sugars, vanilla, and eggs. Then add flour, salt, baking soda, and cinnamon. Mix together, then add oats.
- Drop by tablespoons on to an ungreased baking sheet, and bake for 10 to 12 minutes. Do not overcook.
- To make filling dissolve salt in 2 teaspoons of hot water, then add marshmallow creme, shortening, sugar, and vanilla and mix till fluffy.
- Assemble cookies.
- Yeilds 2 dozen creme pies.
