Peanut Crispies

- 1/4 cup shortening
- 1/4 cup butter or margarine
- 1 cup light brown sugar, packed
- 1 egg, unbeaten
- 1/2 teaspoon vanilla
- 1 cup sifted flour
- 1/2 teaspoon each, baking soda and baking powder
- 1/4 teaspoon salt
- 1 cup rolled oats
- 1/2 cup corn flakes
- 1/2 cup salted peanuts
Instructions
- Melt shorteniing and butter over very low heat. Remove from heat and stir in sugar. Add egg and vanilla; beat well.
- Sift together flour, baking soda, baking powder and salt. Stir into sugar mixture. Blend in oats, corn flakes and peanuts.
- Shape dough into 1 inch balls. Place 2 inches apart on greased baking sheet. Bake at 350 degrees for 12 to 15 minutes.
- Makes about 4 dozen 2 inch cookies.
