    List of Ingredients


    • 1/2 cup butter or margarine, softened
    • 1/4 cup firmly packed brown sugar
    • 1 large egg, separated
    • 1 teaspoon vanilla extract
    • 1 cup all-purpose flour
    • 1/4 teaspoon salt
    • 1 cup finely chopped pecans
    • 1/3 cup strawberry preserves


    Instructions


    1. Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well.
    2. Add egg yolk and vanilla, beating until blended.
    3. Combine flour and salt; add to butter mixture, beating at low speed until blended.
    4. Cover and chill 30 minutes.
    5. Beat egg white lightly.
    6. Roll dough into 1/2" balls; dip into egg white then roll in pecans.
    7. Place 1" apart on an ungreased baking sheet.
    8. Bake at 375 for 5 minutes.
    9. Remove from oven.
    10. Make an indention in the top of each cookie using the handle of a wooden spoon.
    11. Bake for an additional 10 minutes.
    12. Remove to wire racks to cool.
    13. Fill centers of cookies with about 1/2 teaspoon strawberry preserves.
    14. Yield 3 dozen.
