    Soup: Baked Potato Soup

    List of Ingredients


    • 2 potatoes
    • 3 tablespoons butter
    • 2 cups chopped white onion
    • 2 tablespoons all-purpose flour
    • 4 cups chicken stock
    • 2 cups water
    • 1 1/2 cups instant mashed potato flakes
    • 1 teaspoon salt
    • 3/4 teaspoon pepper
    • 1/2 teaspoon basil
    • 1/8 teaspoon thyme
    • 1 cup half and half
    • 1/2 cup shredded cheddar cheese
    • 1/2 pound bacon, cooked and cubed
    • 2 green onions, chopped


    Instructions


    1. Peel and dice potatoes and boil until almost tender; drain.

    2. Meanwhile, cook bacon and chop onions.

    3. Melt butter in skillet and saute onion until tender.

    4. Mix 1 cup of water with 2 tablespoons flour. Add this mixture to the butter and onions; stir to blend well. It should thicken the mixture some.

    5. Put drained potatoes, chicken stock, 1 cup water and onion mixture in crockpot.

    6. Add bacon, half and half, pepper, basil, thyme, salt, and potato flakes; stir.

    7. Cook on low 6 hours or high 3 hours.

    8. Serve with cheddar cheese on top and green onions, if desired.
