    Beef: Beef Ranchero

    List of Ingredients


    • 1 1/2 pounds beef chuck, cut in cubes or stew meat
    • 1 cup chopped onions
    • 2 cloves garlic, minced
    • 1 teaspoon salt
    • 1 can tomatoes with green chiles
    • 1 1/2 cups beef broth
    • 1 cup cubed cheddar cheese
    • 3 cups hot cooked rice


    Instructions


    1. Crockpot: Throw everything but the cheese and rice in a crockpot and cook on low 8 to 10 hours. Fold in cheese just before serving. Serve over rice.

    2. Stovetop: Brown beef in a little oil (about 5 minutes). Add onions and continue cooking until meat is brown and onions are soft. Add garlic, salt, tomatoes and green chiles and broth. Simmer, covered, for an hour (or until meat is tender). Fold in cheese and serve over rice.
