    Soup: Black Bean Soup

    List of Ingredients


    • 4 ounces chorizo
    • 1 small onion chopped
    • 1 clove garlic minced
    • 1 small red bell pepper chopped
    • 1 small green bell pepper chopped
    • 2 tablespoons dry sherry
    • 1 teaspoon ground cumin
    • 1 bay leaf
    • 1 (15 ounce) can black beans undrained
    • 1 (15 ounce) can fat free chicken broth
    • Juice of 1 lime
    • 2 tablespoos minced cilantro
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper


    Instructions


    1. Discard chorizo skin.

    2. Crumble meat and brown in a nonstick skillet for 2 minutes.

    3. Add onion, garlic and bell peppers.

    4. Saute over medium high heat 5 minutes.

    5. Add to slow cooker.

    6. Add dry sherry, ground cumin, bay leaf, beans and broth.

    7. Cover and cook on low 4 to 5 hours.

    8. Remove lid. Scoop out 1 cup beans and press with the back of a fork to mash. Return to slow cooker.

    9. Add lime juice, cilantro, salt and pepper.

    10. Simmer, uncovered just to warm through, about 5 minutes.

    11. 8 1 cup servings at 2 points each.
