Soup: Black Bean Soup

- 4 ounces chorizo
- 1 small onion chopped
- 1 clove garlic minced
- 1 small red bell pepper chopped
- 1 small green bell pepper chopped
- 2 tablespoons dry sherry
- 1 teaspoon ground cumin
- 1 bay leaf
- 1 (15 ounce) can black beans undrained
- 1 (15 ounce) can fat free chicken broth
- Juice of 1 lime
- 2 tablespoos minced cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Discard chorizo skin.
- Crumble meat and brown in a nonstick skillet for 2 minutes.
- Add onion, garlic and bell peppers.
- Saute over medium high heat 5 minutes.
- Add to slow cooker.
- Add dry sherry, ground cumin, bay leaf, beans and broth.
- Cover and cook on low 4 to 5 hours.
- Remove lid. Scoop out 1 cup beans and press with the back of a fork to mash. Return to slow cooker.
- Add lime juice, cilantro, salt and pepper.
- Simmer, uncovered just to warm through, about 5 minutes.
- 8 1 cup servings at 2 points each.
