Beef: Cajun Pot Roast

- 2 pounds boneless beef chuck roast
- 1 tablespoon dried cajun seasoning
- 1 onion, chopped
- 1 (14 ounce) can diced tomatoes, undrained
- 1/2 teaspoon hot pepper sauce
- 1/8 teaspoon pepper
Instructions
- Sprinkle cajun seasoning over roast and rub to coat well. Place in a 4 to 6 quart slow cooker. Top with onion.
- In a small bowl, combine tomatoes with juice, hot pepper sauce and pepper. Pour over vegetables and roast. Cover and cook on low setting for 8 to 10 hours.
- Serves 6
