    Chicken: Chicken Enchilada Chili

    List of Ingredients


    • Olive oil cooking spray
    • 1 1/2 pounds boneless, skinless chicken thighs
    • 1 medium onion, chopped
    • 1 large bell pepper, chopped
    • 2 (14 1/2 ounce) cans diced tomatoes with roasted garlic
    • 2 (15 ounce) cans chili beans in sauce
    • 1 (10 ounce) can enchilada sauce
    • 1 (4 ounce) can diced green chiles
    • 1/2 teaspoon ground cumin
    • Garnish
    • 1/3 cup fat free sour cream
    • 2 tablespoons chopped fresh cilantro
    • Baked tortilla chips


    Instructions


    1. Spray a 4 to 5 quart crockpot with olive oil cooking spray.

    2. Combine all ingredients except sour cream, cilantro and tortilla chips.

    3. Cover and cook on low 7 to 8 hours.

    4. Stir mixture to break up chicken.

    5. Garnish each serving with sour cream, cilantro and tortilla chips as desired.
