Chicken: Country Captain Chicken And Rice

- 2 cups sliced shiitake mushrooms
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1 clove garlic minced
- 1 pound boneless skinless chicken thighs trimmed of all fat and cut into bite-size pieces
- 1 tablespoon flour
- 1/4 cup fat free chicken broth
- 1 1/2 teaspoons curry powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 3 cups canned crushed tomatoes
- 1/4 cup golden raisins
- 2 cups cooked brown rice
Instructions
- Coat a large skillet with cooking spray.
- Add mushrooms, onions, celery and garlic and saute until vegetables are tender, about 5 minutes.
- Place vegetables in slow cooker; add chicken.
- In a cup, stir together flour and chicken broth until smooth. Add to slow cooker.
- Add curry powder, salt, pepper, paprika, curry powder, crushed tomatoes and raisins; stir to combine.
- Cover and cook on low 5 hours.
- To serve, spoon 1/2 cup of rice onto each of 4 plates. Top each with chicken and sauce and serve.
- Servings: 4 (2 1/2 cups chicken mixture and 1/2 cup rice) 7 points.
