Vegetable: Creole Zucchini

- 2 pounds zucchini
- 1 small green bell pepper, chopped
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 4 tomatoes, peeled and chopped
- 2 tablespoons butter
- 2 tablespoons minced parsley
Instructions
- Cut zucchini into 1/4" slices.
- In crockpot, combine zucchini with green bell pepper, onion, garlic, salt and pepper.
- Top with chopped tomatoes, then butter.
- Cover and cook on high about 2 hours or until tender.
- Sprinkle with chopped parsley.
