    Chicken: Rustic Chicken Stew

    List of Ingredients


    • 2 pounds boneless, skinless chicken breasts, washed, patted dry and cut into 1" cubes
    • 3 medium onions, peeled and quartered
    • 2 large carrots, peeled and cut into 1" thick slices
    • 2 potatoes, peeled and cut into 1" cubes
    • 2 (14 ounce) cans chicken broth
    • 1 teaspoon celery seed
    • 1 teaspoon dry thyme leaves
    • 1/2 teaspoon black pepper
    • 8 ounces mushrooms, cleaned and halved
    • 1 cup frozen corn
    • 1 cup frozen peas


    Instructions


    1. In a 5 to 6 quart slow cooker, combine the chicken, onions, carrots, potatoes and broth.

    2. Stir in celery seed, thyme, pepper, mushrooms and corn.

    3. Cover and cook on low until chicken is done and the vegetables are tender, about 7 to 9 hours or on high 4 to 6 hours.

    4. Stir in the peas and cook until they are done, about 15 to 30 minutes.

    5. Makes 8 servings
